    Cut potatoes into chip shapes, rinse off excess starch, then boil until the outside starts to get soft.

    Pat the chips dry. Add a drizzle of olive oil, smoked paprika, and garlic granules, then shake to coat.

    Air fry at 180°C for 20 minutes, shaking partway through. Alternatively, bake in the oven and give them an extra 5 minutes at 200°C to crisp up.

    Transfer fries to a bowl and top with a protein (beef, chicken, or pork), a dollop of sour cream or Greek yogurt, any vegetables you want, and some grated cheese.
