Preheat the oven to 200°C (392°F).

Slice sausages and remove the meat from the casing.

Grate carrot and courgette, and mix with sausage meat.

Add feta cheese and whole grain mustard to the mixture.

Roll out puff pastry and slice down the middle.

Place sausage mixture onto pastry and roll into a log shape.

Brush edges with egg wash and seal the pastry.
