Ingredients
  • 1 tbsp Butter
  • 1 tbsp Flour
  • 2 cups Milk
  • 100 g Mature cheddar cheeseGrated
  • 100 g Red Leicester cheeseGrated
  • 3 LeeksTrimmed and finely cut
  • 900 g PotatoesPeeled and thinly sliced
  • 200 g HamCooked and sliced
  • SaltTo taste
  • Black pepperTo taste

    Melt butter in a saucepan over medium heat.

    Add flour and mix well. Cook for a couple of minutes.

    Gradually add milk in three stages, whisking continuously until smooth.

    Simmer until the sauce thickens, then turn off the heat.

    Add grated cheddar and red Leicester cheese. Stir until melted.

    Taste and season with salt if needed. Set aside.

    Preheat oven to 180°C (355°F).

    Layer cheese sauce, leeks, potato slices, and ham in a baking dish.

    Repeat layers until ingredients are used up, finishing with potatoes.

    Season top with salt and black pepper, then add grated cheese.

    Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 20 minutes to crisp the top.
