Halal Guys Style Chicken & Rice
A homemade version of the famous Halal Guys chicken and rice platter, complete with white and red sauces.

- •100 grams Mayonnaise
- •50 grams Plain Greek yogurt
- •15 grams White vinegar
- •10 cranks Black pepper
- •sprinkle Garlic powder
- •1/4 LemonJuice only

- •15 grams Ground cayenne powder
- •5 grams Red pepper flake
- •10 grams Sugar
- •100 grams Water
- •1/2 LemonJuice only
- •4 Boneless skinless chicken thighs
- •1 small spoonful Cumin seeds
- •5 Cloves
- •3 cloves Garlic
- •200 grams Basmati rice
- •250 grams Chicken broth
- •1 tablespoon Butter(optional)
- •1 Bay leaf

Prepare the white sauce by mixing mayonnaise, Greek yogurt, white vinegar, black pepper, garlic powder, lemon juice, and salt. Optionally add oregano and smoked paprika.

Prepare the red sauce by blending cayenne powder, red pepper flake, salt, sugar, white vinegar, water, and lemon juice. Simmer for 10 minutes.

Thin out chicken thighs, salt both sides, and set aside.

Grind cumin seeds and cloves in a mortar and pestle. Add oregano, black pepper, and garlic to form a paste.

Mix the paste with mayonnaise and lemon juice to create a marinade. Coat chicken thighs and marinate.

Cook chicken thighs in a pan over medium-high heat until browned. Chop in the pan and set aside.

Prepare rice by toasting cumin seeds, turmeric, smoked paprika, bay leaf, and onion in butter. Add rice and toast. Add chicken broth, cover, and cook for 20 minutes.

Assemble the platter with chicken, rice, lettuce, tomatoes, and sauces.
