Ingredients
  • shoulder Lamb shouldercut into inch dice
  • 1 handful Thyme leavespicked
  • 1 teaspoon Chilli powderflat
  • 1 pinch Ground cumin
  • 2 pinches Sumac
  • 1 pinch Sea salt
  • 1 pinch Black pepper
  • 1 handful Pistachio nutspeeled
  • 1 handful Parsleypicked
  • Onionsgrated
  • 1/2 lemon Lemon juice
  • 1 bit Olive oil
  • Flatbreads
  • 1 spoon Yoghurt

    Cut the lamb shoulder into inch dice.

    Mix thyme leaves, chilli powder, ground cumin, sumac, sea salt, and black pepper with the lamb.

    Add pistachio nuts and pulse in a processor until coarse mince.

    Form the mixture around skewers to make kebabs.

    Grate onions and mix with salt and lemon juice, massaging together.

    Prepare salad with cos, rocket, mint, olive oil, and lemon juice.

    Grill the kebabs until cooked through.
