German Coconut Cake

Preheat the oven to 170°C (338°F).

Grease and flour a 900g (2 lb) loaf tin.

In a bowl, whisk together eggs, sunflower oil, sugar, vanilla extract, desiccated coconut, and salt.

Add baking powder and self-raising flour to the mixture and mix well.

Pour the batter into the prepared loaf tin.

Bake in the preheated oven for 50 minutes.

Check with a cocktail stick; if it comes out clean, the cake is done. If not, bake for an additional 5 minutes.

Let the cake cool on a wire rack for 10 minutes before removing from the tin.
