  • 600 grams Strong white bread flour
  • 1 tsp Table saltUse 1.5 tsp if using kosher salt
  • 2 tsp Instant yeastOr 20 grams fresh yeast
  • 360 grams WaterRoom temperature, bottled water preferred
  • 1.5 tbsp Extra virgin olive oilFor oiling the baking pan
  • 15 grams Fresh basil leaves
  • 50 grams Extra virgin olive oilFor topping
  • 3-4 Garlic clovesAbout 15 grams
  • 0.5 tsp SaltFor topping

    Add 600 grams of strong white bread flour to a bowl.

    Mix in 1 tsp of table salt (or 1.5 tsp if using kosher salt).

    Add 7 grams (2 tsp) of instant yeast and mix.

    Add 360 grams of water and mix until dough forms.

    Cover and let rise for 45 minutes at room temperature.

    Oil a baking pan with 1.5 tbsp of extra virgin olive oil.

    Prepare topping by blending 15 grams of basil, 50 grams of olive oil, 3-4 garlic cloves, and 0.5 tsp of salt into a paste.

    Turn out dough, shape into a rectangle, and place in the oiled pan.

    Spread the basil and garlic mixture over the dough and dimple with fingers.

    Cover with cling film and let rise for 45 minutes.

    Preheat oven to 220°C (428°F).
