Garlic and Basil Focaccia Bread

Add 600 grams of strong white bread flour to a bowl.

Mix in 1 tsp of table salt (or 1.5 tsp if using kosher salt).

Add 7 grams (2 tsp) of instant yeast and mix.

Add 360 grams of water and mix until dough forms.

Cover and let rise for 45 minutes at room temperature.

Oil a baking pan with 1.5 tbsp of extra virgin olive oil.

Prepare topping by blending 15 grams of basil, 50 grams of olive oil, 3-4 garlic cloves, and 0.5 tsp of salt into a paste.

Turn out dough, shape into a rectangle, and place in the oiled pan.

Spread the basil and garlic mixture over the dough and dimple with fingers.

Cover with cling film and let rise for 45 minutes.
