Ingredients
  • 2 cups Self-raising flour
  • 2 teaspoons Baking powderAdd only if using plain flour
  • 1/4 teaspoon Salt
  • 1/4 cup Caster sugarGranulated sugar can be used as a substitute
  • 1/2 cup ButterCold
  • 1/2 cup RaisinsSeedless
  • 1/4 cup Mixed candied peel(optional)Double raisins if unavailable
  • 3/4 cup Milk
  • 1 teaspoon Vanilla extract

    Sift the flour, salt, baking powder, and sugar into a bowl.

    Add cold butter and rub into the flour until the mixture resembles fine breadcrumbs.

    Add raisins and mixed candied peel, mix well.

    Combine milk and vanilla extract, then add to the dry ingredients.

    Mix with a knife until the dough starts clumping together.

    Turn dough onto a floured surface and knead gently.

    Roll out dough to 1/2 inch thickness and cut scones with a 6 cm cutter.

    Place scones on a parchment-lined baking tray.
