Fried Rice

- •4 cups Ricecooked, leftover
- •3 Eggsscrambled
- •1 tbsp Unsalted butter(optional)or oil
- •1 tbsp Granulated sugar
- •3 tbsp Soy sauce
- •1 tbsp White vinegar
- •3 Garlic clovesgrated
- •1 inch knob Gingergrated
- •3 tbsp Vegetable oilor other high heat oil
- •1 Carrotdiced
- •1 bunch Green onionsgreens sliced into 1-inch segments, whites finely sliced
- •1 cup Frozen peas
- •Sesame oil(optional)for seasoning

Cook rice using your preferred method and let it chill completely in the refrigerator.

Crack and whisk 3 eggs with salt. Heat butter in a skillet, add eggs, cook, and chop.

Mix sugar, soy sauce, vinegar, garlic, and ginger in a bowl.

Heat oil in a skillet, add diced carrot, cook until soft. Add green onions, cook until colored.

Add frozen peas, cook until hot but not mushy.

Add chilled rice, keep pan hot, stir until rice is hot and slightly crispy.

Add soy sauce mixture, turn off heat, mix well. Fold in scrambled eggs.

Optionally season with sesame oil and salt to taste.
