Wilt the spinach in boiling water, then transfer to ice water. Squeeze out excess water and blend into a puree.

Make a well in the flour, add eggs and spinach puree. Mix to form a dough.

Knead the dough until smooth and elastic, about 10 to 15 minutes.

Cover the dough and let it rest for 30 minutes.

Divide the dough into quarters. Roll out each piece and pass through a pasta machine to desired thickness.
