Fresh & Healthy Greek Salad with Easy Lemon Dressing

- •1 large or 2 small heads heads Romaine lettucechopped into bite-sized pieces, rinsed in ice-cold water and spun dry
- •1 English cucumbersliced
- •1 cup Cherry tomatoeshalved (or use 1 large tomato, diced)
- •1/2 pepper Sweet bell pepperany color; sliced
- •1/2 medium onion Red onionthinly sliced
- •1 large Avocadopeeled, pitted, and cut into bite-sized pieces
- •1/2 cup Kalamata olivessliced
- •4 oz Feta cheesediced
- •3 tbsp Lemon juicefreshly squeezed
- •3 tbsp Extra virgin olive oil
- •1 Garlic clovepressed
- •1/2 tsp Salt

Chop romaine lettuce into bite-sized pieces: cut in half, remove core, slice again, then chop.

Rinse chopped romaine in ice-cold water, drain well, and spin completely dry. Transfer to a serving bowl.

Slice the English cucumber and add to the bowl.

Halve the cherry tomatoes (or dice a large tomato) and add to the bowl.

Slice half a sweet bell pepper and add to the bowl.

Thinly slice half a medium red onion and add to the bowl.

Peel, pit, and cut the avocado into bite-sized pieces; add to the bowl.

Slice and add Kalamata olives, then dice and add feta cheese.

Make the dressing in a small jar: add lemon juice, olive oil, pressed garlic, salt, and black pepper. Cover and shake to combine.

Pour dressing over the salad and toss gently but thoroughly to coat. Serve and enjoy.
