Ingredients
  • Tomatoes
  • Bell peppersDifferent colors, e.g., yellow and red
  • 1 Onion
  • Zucchini
  • Olive oil
  • 1 clove Garlic
  • 2 Bay leaves
  • Thyme(optional)Fresh from the garden
  • Black pepper(optional)To taste
  • Salt(optional)To taste
  • Tomato sauce(optional)Optional for finishing

    Cut the vegetables into 1 cm cubes.

    Heat olive oil in a pan over high heat.

    Add onions, garlic, and bell peppers to the pan. Cook until they start to soften.

    Add zucchini and tomatoes. Stir gently to mix.

    Add bay leaves, thyme, black pepper, and salt. Stir to combine.

    Cover the pan and reduce heat to low. Cook for 15 minutes.
