Wilt down a bag of chopped spinach and squeeze out the juices.

Combine spinach with crumbled feta, ricotta, black pepper, dried mixed herbs, lemon zest, and an egg or olive oil.

Lay down a filo pastry sheet, brush with melted butter, and layer with another sheet. Brush again.
