Preheat oven to 200°C (392°F).

Prepare the chicken by seasoning inside with salt and lemon pepper. Stuff with parsley, thyme, 2 garlic cloves, and shallots.

Truss the chicken using a string to secure the legs and wings.

Place chicken in a roasting pan on its side. Drizzle with oil and add butter.

Roast chicken for 15 minutes on one side.

Turn chicken to the other side and roast for another 15 minutes. Add garlic cloves and mix potatoes around the chicken.

Turn chicken to its back, add onions and tomatoes, and roast for an additional 25 minutes.
