- •450 g Chickencut into small cubes
- •1 tbsp Olive oilfor drizzling

- •2 tbsp Fajita spice mix(optional)or use 1 tsp chili powder, smoked paprika, 1/2 tsp cumin, and garlic powder

- •1 tbsp Butter
- •1 Onionfinely chopped
- •1 Bell peppercut into cubes
- •2 Garlic clovessliced or minced
- •250 g Pastacampanelle or any pasta
- •2 cups Chicken stock
- •2 1/4 cups Milk
- •1 1/2 cups Grated cheesemix of extra sharp cheddar and mozzarella
- •Cilantro or parsley(optional)finely chopped for garnish

Cut chicken into small cubes and drizzle with olive oil. Season with salt, black pepper, and fajita spice mix. Mix well.

Heat a pan over medium-high heat and add olive oil. Cook the chicken for 5–7 minutes until cooked through. Remove and set aside.

Add butter to the pan. Cook onions for 4 minutes until translucent.

Add bell peppers and garlic to the pan. Cook for 2 minutes.

Add dry pasta, chicken stock, and milk. Reduce heat to low and cook until pasta is almost done and sauce thickens.

Stir in grated cheese until melted. Return chicken to the pan and garnish with cilantro or parsley.
