Ingredients
  • 6 medium Gala applespeeled, cored, and diced
  • 2 tablespoons Lemon juiceto prevent apples from browning
  • 1 teaspoon Ground cinnamonfor spice mix
  • 1 teaspoon Ground nutmegfor spice mix
  • Buttercubes, to add flavor and moisture
  • Eggsbeaten
  • Oilfor sponge mix
  • 1 teaspoon Vanilla extractfor sponge mix
  • Sugarfor sponge mix
  • Floursifted, for sponge mix
  • 1.5 teaspoons Baking powderfor sponge mix
  • Saltfor sponge mix
  • Custardto serve

    Preheat the oven to 170°C (338°F) or gas mark 4.

    Peel, core, and dice 6 medium Gala apples. Coat with 2 tablespoons of lemon juice to prevent browning.

    Mix the apple pieces with 1 teaspoon of ground cinnamon and 1 teaspoon of ground nutmeg. Place in the bottom of a baking tin.

    Add cubes of butter on top of the apples.

    Beat eggs in a bowl, then whisk in oil and vanilla extract.

    Add sugar to the egg mixture and whisk until smooth.

    Sift in flour, baking powder, and salt. Whisk until smooth.

    Pour the batter over the apples and level with a spoon.

    Bake in the preheated oven for 50 minutes.
