Ingredients
  • 1/2 box StrawberriesHalf for mix, half for coulis
  • SugarFor caramelizing strawberries
  • Icing sugarTo draw sweetness from strawberries
  • WaterTo help break down sugar
  • CreamWhisk to 3/4 stage
  • MeringuesCrushed into cream
  • Mint chocolateGrated for garnish

    Whisk the cream to a 3/4 stage, leaving some texture.

    Caramelize half the strawberries with sugar and icing sugar in a pan.

    Add a touch of water to the caramelized strawberries, blend, and sieve to make coulis.

    Crush meringues into the whipped cream.

    Mix in the remaining strawberries and a few spoons of coulis into the cream and meringue mixture.

    Line a bowl with cling film, pour the mixture in, and freeze.
