English Onion & Leek Soup
A hearty English soup made with onions, leeks, and a touch of garlic, topped with cheesy toasties.

- •.5 kg Cipollini onionssliced
- •1 kg Leekssliced
- •2 cloves Garlicsquashed
- •1 lug Olive oil
- •1 tbsp Butter
- •5 leaves Sage leaves
- •1 pinch Salt
- •1 pinch Black pepper
- •4 pints Chicken stock
- •4 slices Breadfor toasties
- •200 g Cheesegrated
- •1 swig Worcester saucea few dribbles

Slice the red onions, white onions, cipollini onions, and leeks.

Squash the garlic cloves.

Add olive oil and butter to a pan over medium heat.

Add sage leaves and garlic to the pan.

Add the sliced onions and leeks to the pan with a pinch of salt and pepper. Cook for 25 minutes.

Add chicken stock to the pan and simmer for 10-15 minutes.

Cut the bread slices in half and grate the cheese.

Pour the soup into bowls, add the toasties on top, and sprinkle with grated cheese.

Drizzle with Worcester sauce and place under a grill to melt the cheese.
