  • •1/4 teaspoon Salt
  • •5 Eggslarge, separated
  • •1 cup Granulated sugardivided (3/4 cup + 1/4 cup)
  • •1/3 cup Whole milk
  • •1 teaspoon Vanilla extract
  • •1/3 cup Whipping creamfor the milk soak
  • •9 oz Sweetened condensed milkabout 2/3 of a 14-oz can
  • •12 oz Evaporated milk
  • •2 cups Heavy whipping creamvery cold, for frosting
  • •2 tablespoons Sugarfor frosting
  • •Strawberries(optional)fresh, for topping
  • •Raspberries(optional)fresh, for topping

    Preheat oven to 350°F (175°C). Butter a 9x13-inch casserole dish.

    Whisk together flour, baking powder, and salt. Sift into a large mixing bowl.

    Separate the eggs: yolks in one bowl and whites in another.

    Beat egg yolks with 3/4 cup sugar on high speed until pale yellow and thick, about 2 minutes.

    Add whole milk and vanilla extract to the yolk mixture and gently fold until blended. Set aside.

    With clean, dry beaters, beat egg whites on high speed until soft peaks form, about 1 minute.

    With mixer running, add remaining 1/4 cup sugar and beat on high speed until stiff but not dry, about 1 minute.

    Pour egg yolk mixture over the flour mixture and mix until no streaks of flour remain, scraping the bowl as needed.

    Add all beaten egg whites to the batter and gently fold just until uniformly blended (do not overmix).

    Pour batter into the buttered dish and smooth the top lightly.

    Bake on the center rack at 350°F for about 30 minutes, or until a toothpick comes out clean.

    Remove cake from oven and cool almost to room temperature (cool on a wire rack or trivet for faster cooling).

    Make the milk soak: in a large measuring cup or bowl with a pouring lip, combine whipping cream, sweetened condensed milk, and evaporated milk; stir until combined.

    Poke the top of the cake all over with a fork. Slowly drizzle the milk mixture evenly over the cake.

    Let the cake rest about 30 minutes to absorb the milk mixture.

    Make frosting: beat very cold heavy whipping cream with sugar on high speed until thick and spreadable, about 2 minutes.
