  • •Ladyfingersenough to make 2 layers in the dish (amount not specified)
  • •6 Egg yolkslarge
  • •3/4 cup Granulated sugar
  • •16 ounces Mascarpone cheese
  • •3 tablespoons Rumfor the mascarpone cream
  • •2 cups Heavy whipping creamcold
  • •Unsweetened cocoa powderfor dusting (amount to taste)

    Make the soak: In a medium bowl, combine the strong coffee/espresso with rum.

    Quickly dip half of the ladyfingers into the coffee mixture (dip very briefly so they don’t get soggy) and arrange in a single layer in the serving dish.

    Make the custard base: In a medium bowl, whisk egg yolks with granulated sugar. Set the bowl over a saucepan of simmering water (double boiler; bowl should not touch water) and whisk constantly over low heat until the mixture is lighter, slightly thickened, and sugar is dissolved, about 8–10 minutes. Remove from heat and cool slightly.

    Make mascarpone mixture: Beat mascarpone with rum until creamy and combined. Beat in the warm yolk mixture until fully incorporated and creamy.

    Whip cream: In a separate large bowl, beat cold heavy whipping cream to medium peaks (about 3 minutes).

    Fold: Fold half of the whipped cream into the mascarpone mixture until incorporated, then fold in the remaining whipped cream just until well combined (do not overmix).

    Assemble: Spread half of the cream mixture over the first ladyfinger layer.

    Dip remaining ladyfingers quickly (once on each side) and arrange evenly in a single layer over the cream.

    Spread the remaining cream evenly over the top. Cover tightly with plastic wrap and refrigerate at least 6 hours or overnight to set.

    Just before serving, dust generously with unsweetened cocoa powder (regular or Dutch-processed). Clean/wipe the sides for a neat presentation if desired. Slice and serve (wipe knife between slices for cleaner cuts).
