Ingredients
  • 2 Lemonszested and juiced
  • 2 teaspoons Sugar
  • Butterfor greasing
  • Flourfor dusting
  • 3 Eggslarge
  • Vegetable oilor sunflower/canola oil
  • Lemon extract(optional)or vanilla extract
  • Self-raising flourcontains baking powder
  • Salt
  • 2 teaspoons Baking powderif using plain flour
  • Yellow food coloring(optional)3-4 drops
  • Lemon curdwarmed

    Preheat oven to 170°C (340°F).

    Wash and zest the lemons, avoiding the white pith.

    Juice the lemons and mix with 2 teaspoons of sugar until dissolved.

    Grease and flour a pudding bowl.

    In a bowl, whisk together 3 large eggs, oil, lemon extract, lemon zest, and sugar.

    Sift in self-raising flour, salt, and baking powder. Mix until smooth.

    Add yellow food coloring if desired and mix well.

    Pour batter into the prepared pudding bowl and tap to remove air bubbles.

    Bake for 55 minutes. Check doneness with a cocktail stick.
