Preheat oven to 170°C (340°F).

Wash and zest the lemons, avoiding the white pith.

Juice the lemons and mix with 2 teaspoons of sugar until dissolved.

Grease and flour a pudding bowl.

In a bowl, whisk together 3 large eggs, oil, lemon extract, lemon zest, and sugar.

Sift in self-raising flour, salt, and baking powder. Mix until smooth.
