Easy European Sponge Cake (Biskvit)
A classic European sponge cake base made with just eggs, sugar, flour, and baking powder. Bakes into two flat 9-inch layers.

Preheat the oven to 350°F (175°C).

Beat the eggs on high speed for 1 minute.

With the mixer running, gradually add the sugar and continue beating on high speed for about 8 minutes, until thick and fluffy.

Whisk together the flour and baking powder.

Sift the flour mixture into the egg mixture in thirds, folding gently between additions. Fold just until no streaks of flour remain, scraping from the bottom to avoid pockets of flour.

Divide the batter evenly between two 9-inch cake pans lined on the bottom with parchment paper (do not grease the sides). Smooth the tops.

Bake at 350°F (175°C) for about 25 minutes, until deep golden on top.

A few minutes after removing from the oven, loosen the cakes from the pans, invert onto a wire rack, and remove the parchment. Cool to room temperature before slicing if desired.
