  • 6 oz Bittersweet chocolateChopped
  • 1/2 cup Unsalted butterCut into pieces
  • 2 EggsLarge, room temperature
  • 2 Egg yolksFor added richness
  • 1/4 cup Granulated sugar
  • 1/8 teaspoon SaltFor contrast
  • 2 tablespoons All-purpose flourSifted

    Preheat oven to 450°F (232°C).

    Butter and flour six 4 to 5 oz ramekins.

    Chop 6 oz of bittersweet chocolate.

    Melt chocolate and 1/2 cup unsalted butter over a double boiler.

    In a large bowl, beat 2 eggs, 2 egg yolks, 1/4 cup sugar, and 1/8 teaspoon salt until pale yellow.

    Add melted chocolate mixture to the egg mixture.

    Sift in 2 tablespoons of flour and mix until combined.

    Divide batter among ramekins.
