Ingredients
  • 1 cup Rice vinegar
  • 1 square Kombu2-inch square
  • 3 tablespoons Granulated sugar
  • 1 tablespoon Kosher saltplus one teaspoon
  • 2 cups Short grain rice
  • 2 cups Water
  • 2/3 cup Kewpie mayo
  • 1 tablespoon Sriracha
  • 2 teaspoons Gochujang
  • 1 tablespoon Chili oil solidsjust the solids at the bottom
  • 1 Green onionthinly sliced
  • Sesame oil(optional)a couple of drops
  • 2 cloves Garlic(optional)grated
  • Nori sheetscut in half
  • Cucumbercut into sticks
  • Sashimi grade tunacut into small cubes
  • Furikake(optional)optional
  • Soy sauce(optional)to taste
  • King crab legsseparated
  • 1/2 cup Unsalted butter
  • Bonito flakesfor flavoring butter
  • 1/4 Avocadoper roll
  • Flaky salt(optional)optional
  • Caviar(optional)optional
  • Mushroomsseared
  • Mirin(optional)for glazing mushrooms
  • Thai basil(optional)for garnish
  • Mint(optional)for garnish
  • Cilantro(optional)for garnish
  • Micro greens(optional)for garnish

    Make sushi zoo by heating rice vinegar, kombu, sugar, and salt until sugar dissolves. Do not boil. Let sit for 10-15 minutes, then strain.

    Rinse short grain rice three times, then soak in water for 15 minutes before cooking in a rice cooker.

    Mix cooked rice with sushi zoo, using half a cup of sushi zoo per two cups of rice. Cool rice by gently folding it.

    Prepare spicy mayo by mixing Kewpie mayo, sriracha, gochujang, chili oil solids, green onion, and sesame oil.

    Cut nori sheets in half for hand rolls.
