Dim Sum-Style Steamed Pork Ribs

Wash the pork spare ribs thoroughly to remove excess blood and impurities.

Prepare a brine with 2 cups of water, 2 teaspoons of kosher salt, and 1/2 teaspoon of sodium carbonate. Stir until dissolved.

Soak the ribs in the brine for at least 30 minutes, preferably overnight in the refrigerator.

Remove ribs from the brine and pat dry.

Marinate the ribs with 1 teaspoon of sugar, 1/2 teaspoon of white pepper, 2 teaspoons of Shaoxing wine, 1 teaspoon of sesame oil, and chopped fermented black beans. Let it sit for at least 30 minutes.

Coat the marinated ribs with 1/4 cup of cornstarch to form a slurry.
