Ingredients
  • .5 tsp Coriander seedsroasted
  • .5 tsp Cumin seedsroasted
  • 2 cloves Garliccrushed
  • 1 tsp Chilli powder
  • .5 tsp Turmeric
  • 1 tbsp Gingerfinely chopped
  • 2 tbsp Olive oil
  • 2 pieces Onionsfinely chopped
  • 2 pieces Potatoescubed
  • 4 cups Chicken stock
  • 1 can Creamed corn
  • 1 can Sweet corn kernelswith some juices

    Roast coriander and cumin seeds until aromatic.

    Grind the roasted seeds and add crushed garlic, chilli powder, turmeric, and finely chopped ginger.

    Mix with olive oil to form a thick paste.

    Sauté finely chopped onions in olive oil.

    Add the curry paste and cook to release flavors.

    Add cubed potatoes, chicken stock, and season.

    Once potatoes are softened, stir in creamed corn.

    Add whole sweet corn kernels with some juices.

    Transfer to a blender and blitz until smooth.

    For texture, add more whole sweet corn and heat before serving.
