Creamy Shrimp Alfredo Pasta

- •3/4 lb Fettuccine noodlescook in salted water
- •1/2 tsp Saltfor seasoning shrimp (plus more to taste and for pasta water)
- •1 lb Shrimppatted dry
- •1/4 tsp Paprikafor seasoning shrimp
- •1/4 tsp Black pepperfor seasoning shrimp (plus more to taste)
- •1 Tbsp Oilfor cooking shrimp
- •1/2 medium Onionchopped
- •2 Tbsp Butterfor sautéing onion
- •1 clove Garlic cloveminced
- •1/3 cup White winee.g., Chardonnay
- •2 cups Creambring to a simmer
- •1/3 cup Parmesan cheesestir in until melted (plus more for serving)
- •Parsley(optional)fresh, for garnish

Cook fettuccine in salted water according to package instructions until al dente; drain and do not rinse.

Pat shrimp dry. Season with salt, paprika, and black pepper; stir to coat.

Heat a large pan over medium-high heat. Add oil, then cook shrimp in a single layer about 2 minutes per side, just until cooked through. Remove shrimp from the pan.

In the same skillet, melt butter. Add chopped onion and sauté about 5 minutes until soft and golden.

Add minced garlic and stir about 1 minute until fragrant.

Add white wine and cook until mostly evaporated.

Add cream, bring to a simmer, and cook 2 minutes.

Stir in Parmesan until melted and sauce is smooth; bring just to a light simmer (do not boil). Turn off heat and season with salt and pepper to taste.

Add cooked pasta and shrimp; toss until noodles are well coated in Alfredo sauce.

Garnish with fresh parsley and additional Parmesan if desired; serve.
