Ingredients
  • 1 stick Celerysliced finely
  • .5 .5 Onionssliced
  • 1 count Potatoessliced
  • 1 count Celeriacsliced finely
  • 240 ml Double cream
  • 1 count Knorr chicken stock potmade into stock
  • 2 tbsp Butter
  • 1 count Leekswhite part only, sliced finely
  • .5 .5 Celery leaves(optional)for garnish

    Add butter to the pan and heat.

    Slice celery, onions, leeks, and celeriac finely.

    Sweat the vegetables in butter for 10-15 minutes without color.

    In another pan, add sliced potatoes, double cream, and chicken stock.

    Bring the cream and stock to a boil with the potatoes.

    Add the sweated vegetables to the boiling cream and stock.

    Cook for 10 minutes on a very low heat.

    Blend the soup until smooth, then pass through a fine sieve.

    Garnish with celery leaves before serving.
