Ingredients
  • 2 Eggslarge, at room temperature
  • 1/2 cup Brown sugar
  • 2/3 cup Plain yogurtat room temperature
  • 3 Tbsp Vegetable oil(optional)or coconut oil
  • 1 + 1/3 cups Oat flourcertified gluten-free if needed
  • 2 tsp Baking powder
  • 1 tsp Ground cinnamon
  • Salta pinch
  • 3 Applesmedium, peeled and chopped
  • 1/4 cup Sugar
  • 2 tsp Lemon juice(optional)or white vinegar
  • 1/2 tsp Ground cinnamon
  • 1/3 cup Water
  • 1 Tbsp Cornstarch
  • 1/3 cup White chocolate
  • 1 Tbsp Milkadd more if needed

    Whisk the eggs and brown sugar for about 1 minute until fully combined.

    Add plain yogurt and vegetable oil. Mix until smooth.

    Sift oat flour, baking powder, cinnamon, and salt over the wet mixture. Fold until just combined.

    Pour the batter into a 20x20 cm pan lined with parchment paper.

    Bake in a preheated oven at 180°C for about 20 minutes or until a toothpick comes out clean.

    Let the cake cool completely before adding the topping.

    Cook apples, sugar, lemon juice, and cinnamon over medium heat until soft.

    Mix water and cornstarch until dissolved. Add to apples to thicken.

    Melt white chocolate in the microwave, stirring until smooth. Add milk to reach pourable consistency.
