Preheat the oven to 350°F (175°C) and prepare a 9-inch cake round by spraying or buttering it.

Sift together 1 3/4 cups of all-purpose flour, 3/4 teaspoon of baking soda, and 1/2 teaspoon of salt in a large bowl.

In another bowl, cream 1/2 cup of room temperature unsalted butter with 3/4 cup of packed light brown sugar and 1/4 cup of granulated sugar until smooth.

Add one large egg and 1/2 teaspoon of vanilla extract to the butter mixture and mix until well combined.

Gradually add the dry ingredients to the wet ingredients and mix on low until almost combined.

Fold in 1 1/2 cups of semi-sweet chocolate chips by hand.

Press the dough into the prepared cake pan and flatten it evenly.

Bake for 20 to 25 minutes until puffed and golden.

For the frosting, cream 6 tablespoons of room temperature butter, then add 1 1/2 cups of powdered sugar and 3 tablespoons of cocoa powder. Mix on low.

Add 2 tablespoons of milk and 1/2 teaspoon of vanilla extract to the frosting and mix until smooth.

Pipe the chocolate frosting onto the cooled cookie cake and add sprinkles if desired.
