  • Baby leekspart boiled for five minutes
  • Olive oilfor rubbing and dressing
  • Saltto taste
  • Fennelshaved thin
  • Radicchio trevisowilted
  • Chorizosliced
  • Rosemarya bit
  • 2 Garlic clovesgrated
  • Balsamic vinegar
  • Lemon juice
  • Squidconcertina effect
  • Black pepperto taste
  • Fennel topssliced

    Rub olive oil over the baby leeks and add a pinch of salt.

    Grill the leeks on a chargrill.
