Ingredients
  • 2 teaspoons Ground coffeedissolved in 20 ml boiling water, for cake batter and cream filling
  • 1 cup Buttersoftened
  • 1 cup Castor sugar
  • 4 Eggs
  • 1 teaspoon Vanilla extract
  • 2 cups Self-raising floursifted
  • 2 teaspoons Baking powderif using plain flour, add 4 teaspoons total
  • 1 cup Cream cheeseMascarpone preferred
  • 1 cup Double creamor heavy cream
  • 1/2 cup Icing sugarpowdered sugar
  • 1 cup Walnut piecesfor topping

    Preheat oven to 190°C (375°F). Grease and line two sandwich cake tins.

    Prepare concentrated coffee solution using ground coffee or instant coffee.

    Cream butter and sugar together until light and smooth.

    Add eggs one at a time, whisking until creamy.

    Add vanilla extract and coffee solution to the mixture.

    Sift in flour and baking powder, fold until smooth.

    Divide batter into tins, level, and bake for 20 minutes.

    Prepare coffee whipped cream by blending cream cheese, cream, icing sugar, vanilla, and coffee solution.

    Cool cakes, then spread half of the cream on one sponge, top with the other sponge, and spread remaining cream on top.
