Cod in Parsley Sauce

  • 2 Cod filletsSkin removed
  • 2 tbsp Butter
  • 2 tbsp Flour
  • 2 cups Milk
  • SaltTo taste
  • White pepperTo taste
  • 1 Bay leaf(optional)Crushed
  • 2 handfuls ParsleyFresh, finely chopped
  • 1/2 lemon Lemon juiceTo taste

    Melt butter in a pan over medium-low heat.

    Add flour to the melted butter and cook for 2-3 minutes to form a roux.

    Gradually add milk to the roux, stirring continuously to avoid lumps.

    Season with salt and white pepper to taste.

    Add a crushed bay leaf and simmer the sauce for 3-4 minutes.

    Place the cod fillets in the sauce and poach for 3 minutes on each side.
