Ingredients
  • 400 G Yellow onionssliced
  • 50 g Butter
  • 0.5 liter Water
  • 0.5 liter Beef stockgood quality
  • Saltto taste
  • Black pepperto taste
  • Bouquet garnihomemade
  • 2 pieces Breadtoasted
  • 100 g Gruyère cheesegrated, up to 200g

    Make the beef stock by browning pieces of rump steak in a pan with a little oil. Add 0.5 liters of water and 0.5 liters of beef stock. Bring to a boil, then simmer for 30 minutes.

    Melt 50g of butter in a cast iron pan. Add 400g of sliced onions and cook on medium to low heat until brown, about 30 minutes. Add salt and pepper to taste.

    Gradually add the stock to the onions, deglazing the pan. Add the bouquet garni and simmer for 20 minutes.

    Remove the bouquet garni and adjust seasoning if necessary.

    Place toasted bread in bowls, pour the soup over, and top with grated Gruyère cheese.

    Grill until the cheese is melted and bubbly.
