Ingredients
  • 3 cups All-purpose flour
  • 3/4 teaspoon Kosher salt
  • 1 tablespoon Baking soda
  • 1 1/2 teaspoons Baking powder
  • 2 2/3 cups Granulated sugar
  • 1/2 cup Cocoa powderUse good quality cocoa powder
  • 1 cup Buttermilk
  • 1/2 cup Sour cream
  • 3/4 cup Vegetable oil
  • 3 Eggs
  • 1 dash Vanilla extract
  • 1 1/2 cups Strong hot coffee
  • 3 sticks Unsalted butterRoom temperature
  • 1 pound Confectioner's sugar
  • 1/3 cup Fudge(optional)Add more if desired

    Preheat oven to 350°F (175°C).

    Sift together 3 cups of all-purpose flour, 3/4 teaspoon kosher salt, 1 tablespoon baking soda, 1 1/2 teaspoons baking powder, 2 2/3 cups granulated sugar, and 1/2 cup cocoa powder.

    Whisk the dry ingredients to combine.

    In a separate bowl, mix 1 cup buttermilk, 1/2 cup sour cream, 3/4 cup vegetable oil, 3 eggs, a dash of vanilla extract, and 1 1/2 cups strong hot coffee.

    Combine wet and dry ingredients in a stand mixer with a paddle attachment. Mix until smooth.

    Pour batter into a prepared 9x13 inch pan lined with parchment paper.

    Bake in the oven for about 50 minutes or until the center is set.

    For the buttercream, beat 3 sticks of unsalted butter with a pinch of salt and 1/2 cup cocoa powder until smooth.

    Add 1 pound confectioner's sugar to the butter mixture and beat until combined.

    Mix in 1/3 cup fudge. Adjust to taste.

    Once the cake is cool, spread the buttercream over the top using an ice cream scoop and offset spatula.
