Chocolate Sandwich Cake

- •1 cup Caster sugar
- •4 Eggsroom temperature
- •1 cup Self-raising floursifted
- •1/4 cup Cocoa powdersifted
- •1 teaspoon Baking powder
- •1/4 cup Milk
- •1 teaspoon Vanilla extract
- •300 g Chocolatehalf milk and half dark
- •300 ml Double creamheavy cream
- •Jam(optional)sour cherry curd or choice

Preheat oven to 170°C (340°F). Grease and line two sandwich cake tins with parchment paper.

Cream softened butter and caster sugar together until pale.

Beat in eggs one at a time until well combined.

Sift self-raising flour, cocoa powder, and baking powder into the mixture.

Mix milk and vanilla extract, then add to the bowl. Fold everything together until smooth.

Divide batter equally between the two tins and level the tops.

Bake for 25 minutes. Check doneness with a cocktail stick.

For ganache, heat cream until small bubbles appear. Pour over chocolate and stir until smooth.

Refrigerate ganache for 30 minutes until set.

Spread jam on one cake layer, then a quarter of the ganache. Place the second cake layer on top.

Spread remaining ganache over the top and sides of the cake. Grate white chocolate on top if desired.
