Make the caramel by flattening sugar in a pan without stirring. Add chopped mint to flavor.

Pour caramel onto an oiled tray and let it cool.

Melt dark chocolate in a bain-marie.

In a mixing bowl, whisk sugar, two whole eggs, and three egg yolks until light and creamy.

Add melted butter to the warm chocolate, then combine with the egg mixture.

Beat four egg whites until stiff peaks form, adding sugar gradually.

Break caramel into shards, reserving some for decoration, and mix the rest into the batter.
