  • 4 Eggs
  • 175 grams Sunflower oil
  • 90 grams Granulated sugar
  • 1 tsp Vanilla extractHomemade
  • 30 grams Golden syrupCan substitute with light corn syrup or treacle
  • FlourSifted
  • Baking powderAdd extra 1.5 tsp if using plain flour
  • Cocoa powderSifted
  • SaltSifted

    Preheat the oven to 170°C (338°F) or gas mark 4.

    Grease and flour a 900g (2-pound) loaf tin.

    Whisk 4 eggs in a bowl.

    Add 175g sunflower oil and whisk.

    Add 90g granulated sugar, 1 tsp vanilla extract, and 30g golden syrup. Whisk well.

    Sift flour, baking powder, cocoa powder, and salt into the bowl.

    Mix until smooth and shiny.

    Pour the batter into the prepared tin.

    Bake for 50 minutes. Check with a cocktail stick; if it comes out clean, the cake is done.

    Let the cake cool for 10 minutes on a wire rack before removing from the tin.
