Ingredients
  • Szechuan peppercornstoasted
  • Coriander seedstoasted
  • Chilli flakes
  • Plain flourseasoned
  • Olive oil
  • Whitebait
  • Garlic mayonnaise(optional)for serving
  • Lemon(optional)for serving

    Toast Szechuan peppercorns and coriander seeds in a hot dry pan to release their flavors.

    Add chilli flakes and grind with a pestle and mortar to make a fiery fine powder.

    Combine the spice mix with plain flour, season, and mix well.

    Add olive oil to a hot pan.
