Ingredients
  • 1 stick Cinnamon stick
  • 1 nut Nutmeg
  • 2 Bay leaves
  • 1 tablespoon Whole cloves
  • 2 tablespoons Cumin seeds
  • 3 tablespoons Coriander seeds
  • 1 tablespoon Cardamom
  • 1 teaspoon Red pepper flake(optional)For heat
  • 1 cup Full fat yogurt
  • 2 inches GingerGrated
  • 2 cloves GarlicGrated
  • SaltPinch
  • Black pepperFreshly ground
  • Olive oilHealthy squirt
  • Boneless skinless chicken breastsCut into 1-inch cubes
  • 1 small Yellow onionMinced
  • 1 small Bird's eye chiliFinely minced
  • 1 tablespoon Tomato paste
  • 28 ounce Crushed tomatoes
  • SugarPinch
  • 3/4 cup Heavy cream
  • Basmati rice
  • Cilantro(optional)For garnish

    Make curry powder by toasting cinnamon, bay leaves, cloves, cumin seeds, coriander seeds, and cardamom. Grind into a fine powder and add nutmeg.

    Prepare yogurt marinade with yogurt, grated ginger, garlic, curry powder, salt, pepper, and olive oil. Mix with chicken cubes.

    Marinate chicken for 4 to 24 hours.

    Broil marinated chicken on high for 10-15 minutes until internal temperature reaches 160°F.

    Make sauce by sautéing onion, ginger, garlic, and chili in vegetable oil. Add tomato paste, curry powder, crushed tomatoes, and sugar. Cook for 5 minutes.

    Add heavy cream to sauce and simmer. Add broiled chicken and cook for 5-10 minutes.
