  • 2 pounds Chicken breast or thighsChopped into cubes
  • 1 percent Salt1% by weight of chicken
  • 50 grams Mayonnaise
  • 4 Garlic clovesGrated
  • 20 cranks Black pepper
  • 1 spoonful Dried oregano
  • Lemon zestA bit
  • 50 grams Olive oil
  • 25 grams Red wine vinegar
  • Lemon juiceA little spritz
  • Fresh parsleyMinced
  • 1 pinch SugarTo balance
  • 1 pinch MSG(optional)

    Chop chicken into cubes and weigh.

    Add 1% salt by weight to chicken and mix.

    Dry brine chicken in fridge.

    Prepare mayo marinade with mayo, garlic, black pepper, oregano, and lemon zest.
