  • 1/2 Chickenhalf chicken
  • Wild garlicfor butter and garnish
  • Salted buttersoftened
  • 1 clove Garlicraw, for butter
  • Parsleyfor butter
  • 1 Lemonzest and juice for butter
  • Potatoesfor chips
  • Rosemaryfor chips
  • Saltto taste
  • Mayonnaise(optional)lemon mayonnaise for serving

    Prepare the wild garlic butter by blending softened salted butter with wild garlic, parsley, one clove of raw garlic, lemon zest, and lemon juice.

    Peel and cut potatoes into large chips. Boil in salted water until cooked through.

    Prepare the chicken by removing the backbone and wishbone. Coat with wild garlic butter.

    Cook the chicken in the oven at a low flame for about 30 minutes, basting occasionally with the garlic butter.

    Fry the boiled chips until crispy. Season with rosemary salt.
