Chicken and Chorizo Pie

- •200 g Chicken breastdiced
- •1 tbsp Olive oil
- •100 g Chestnut mushroomsdiced
- •0.5 tsp Smoky paprika(optional)mild
- •75 ml Chicken stockor half chicken stock cube dissolved in hot water
- •Black pepper(optional)to taste
- •2 Spring onionschopped
- •100 ml Double cream
- •2 tbsp Cornflourmixed with cold water
- •1 tbsp Parsley(optional)chopped
- •300 g Flourfor pastry
- •75 g Lardfor pastry
- •75 g Butterfor pastry
- •1 tsp Saltfor pastry
- •1 Eggfor egg wash
- •1 tbsp Milkfor egg wash

Dice the chorizo sausage and chicken breast into small pieces.

Heat olive oil in a pan and fry the chicken until white.

Add the chorizo to the pan and fold it in.

Add diced mushrooms and mix well.

Optionally add smoky paprika and mix.

Add chicken stock and season with black pepper.

Thicken with cornflour mixed with water.

Cool the filling completely and refrigerate for at least 2 hours.

Prepare hot water crust pastry by melting lard and butter in water, then mix with flour and salt.

Roll out pastry and cut bases and lids for pie tins.

Fill pastry cases with chilled filling, cover with lids, and seal edges.
