Prepare the sauce by mixing mayonnaise, Carolina Gold barbecue sauce, honey, mustard, and black pepper. Store in the fridge.

Cook bacon in a cool pan, then turn on the heat to render fat and crisp. Set aside on paper towels.

Butterfly the chicken breast and cut into two pieces. Marinate with mayonnaise, lemon zest, garlic, thyme, black pepper, and salt.
