Ingredients
  • 5 to 6 medium ZucchiniCoarsely grated and chopped into small pieces
  • Olive oilCold pressed extra virgin
  • 1 clove GarlicSmashed
  • SaltTo taste
  • PastaShort pasta like rigatoni or penne
  • Parmigiano ReggianoFinely grated

    Coarsely grate 5 to 6 medium zucchinis and chop the rest into small pieces.

    Heat olive oil in a pan and add the grated and chopped zucchini.

    Add a smashed garlic clove to the pan and cook until the zucchini is tender. Remove the garlic.

    Cook the pasta in salted water until al dente.

    Mix finely grated Parmigiano Reggiano with hot starchy pasta water to create a creamy sauce.
