Cheesy Worcestershire Tofu Bake

Ingredients
  • 200g tofucubed
  • 150g mozzarellagrated
  • 100g paneercrumbled
  • 2 tbsp Worcestershire sauce
  • 1 carrot(optional)thinly sliced
  • 2 large free range eggsbeaten
  • to taste salt
  • to taste black pepper

    Preheat the oven to 180°C fan. Lightly grease a small baking dish if needed to prevent sticking.

    In a bowl, toss the cubed tofu with the Worcestershire sauce, a pinch of salt and a few grinds of black pepper. Leave to marinate for 10 minutes.

    Arrange the marinated tofu in the baking dish in an even layer. Scatter over the grated mozzarella, crumbled paneer and (if using) the thinly sliced carrot.

    Pour the beaten eggs evenly over the tofu and cheese mixture, tilting the dish slightly so the egg runs into the gaps.

    Bake for about 20 minutes, or until the eggs are set and the cheeses are melted and bubbling. Serve hot.
