Cheesy Cauliflower Gratin

- •2 cups Milk

- •1 Bay leaf

Preheat oven to 180°C (356°F).

Warm milk with salt, white pepper, bay leaf, grated nutmeg, and onion pricked with cloves. Let it infuse.

Melt butter in a pan, add flour to make a roux. Cook gently without browning.

Boil cauliflower in salted water until tender. Drain and rinse with cold water.

Strain infused milk and gradually add to the roux, whisking to make bechamel sauce. Add cayenne pepper if desired.
