  • Plain flourFor pastry
  • Salt
  • ButterFor pastry
  • Ice cold waterFor pastry
  • Spring onionsFinely chopped
  • 200 g Red Leicester cheeseGrated
  • 100 g Mature cheddar cheeseGrated
  • 1 EggFor egg wash
  • MilkFor egg wash

    Boil potatoes until soft, about 20 minutes.

    Make shortcrust pastry using flour, salt, butter, and ice cold water.

    Mash potatoes without butter until fluffy.

    Mix mashed potatoes with salt, pepper, chopped spring onions, and grated cheeses.

    Roll out pastry and line a pie tin with the base pastry.
