  • Sirloinminced twice
  • 2 Potato bunslight and airy
  • 1 cm Onionsthick rings, grilled
  • Mayonnaisefor sauce
  • Yellow mustardfor sauce
  • Cayenne pepperfor sauce
  • Pickle juicefor sauce
  • Sugarfor sauce
  • Black pepperfor sauce
  • Saltfor sauce
  • Picklesblended for sauce
  • 2 cloves Garlicblended for sauce
  • Red Leicester cheesefor topping
  • Olive oilfor cooking

    Mince the chuck steak and sirloin twice for even fat distribution.

    Form the minced beef into 100g patties.

    Slice onions into 1 cm thick rings and grill until charred but still textured.

    Prepare the sauce by mixing mayonnaise, yellow mustard, cayenne pepper, pickle juice, sugar, black pepper, salt, blended pickles, and garlic.

    Toast the potato buns until they have a nice sear.

    Cook the beef patties on a hot cast iron plate, season with salt and pepper, and add Red Leicester cheese to melt.
