- •.5 lb Button mushroomscleaned and trimmed
- •.5 lb Chanterelle mushroomscleaned and trimmed
- •2 Shallotsfinely chopped
- •2 tbsp Butter
- •1 cup Heavy cream
- •1/2 cup Reduced stockdemi-glace or similar
- •Black pepper(optional)to taste
- •Parsley(optional)for garnish

Clean and trim the mushrooms, removing dirt and particles.

Melt butter in a pan over medium heat and sweat the shallots.

Add the mushrooms to the pan and cook until they release their moisture.

Add the cream and simmer for 10 minutes to reduce and infuse flavors.
